CULINARY QUERIES with AMY BEH

MY children, nephews and nieces love ice-blocks. I would like to make some homemade ones for them. Can you share with me an idea as to how to make ice-blocks? – Koh Sui Yin

Here’s an interesting way to make homemade ice-blocks for your children.

Fruity Ice-blocks

2 ripe mangoes, peeled, seeded and chopped
3-4 passion fruits, halved
300ml freshly squeezed orange juice
200ml freshly squeezed lemon juice

Place chopped mangoes in a food processor and blend until smooth. Pour out into a measuring jug and add passion fruit pulp. Stir in orange and lemon juice to mix.

Pour the mixture into moulds and insert a paddle pop stick. Put the prepared ice-block moulds in the freezer compartment of the refrigerator. Allow to freeze until set.

Remove ice-blocks from the moulds and serve at once.

CAN you please tell me what is treacle? Can I buy it in supermarkets? – Mazlina Nordin

Treacle is a blend of refinery syrup and extract molasses. It has a unique bitter flavour and is used in rich fruit cakes and desserts. It is available in major supermarkets or even in cake baking shops.

Chicken wings are great as a snack at any time.

Spicy Roasted Chicken Wings

Marinade

1 tbsp chilli powder
1 tbsp meat curry powder
2 tbsp chilli sauce
1 tbsp tomato sauce
1 tbsp oyster sauce
½ tsp pepper
1 tbsp fish sauce
1½ tbsp sugar
2 tbsp honey

Rinse the chicken wings and cut off wing tips. Pat dry with several pieces of paper kitchen towels.

Combine marinade in a mixing bowl. Add chicken wings to the marinade. Toss and rub marinade all over the chicken wings. Leave in the refrigerator for 3-4 hours.

Lightly grease a wire rack and arrange chicken wings over. Roast in a preheated oven at 200°C for 25 minutes. Halfway through, remove the chicken wings out and brush the pieces with the remaining marinade mixture. Continue to roast until the chicken wings are cooked through or golden brown.
