Little Cupcakes

i had a friend who's a loyal to this buttery cupcakes where she would bake this every year during Raya (and never fail to give me a tippu-ware pack full and surely 'habisss' in no time). not only that, she also wrote me the recipe (hoping that i won't begging for extra tipu-ware full of cuppies every year) but being me, i had misplaced it!


only years, and years after i long missed her cuppies (since i had my Raya in KB for 3 years-in-a-row), today i found the recipe. it isn't her piece of recipe, but i promise this will be as good as hers because this recipe is from my ever trusted source: The Australian Women's Weekly mag.


this is my favourite, ever! enjoy!!





Cupcakes

125g butter (softened)
2 teaspoon finely grated orange or lemon rind
150g caster sugar
2 eggs
60g dessicated coconut
185g self-raising flour
80ml fresh milk



Preheat the oven to 180 C (160 C if fan forced). Line muffin pan with paper cases.

Beat butter, eggs, rind and sugar in a small bowl with an electric mixer
until light and fluffy. Stir in the coconut, then sifted flour and milk.

Divide mixture among cases; smooth surface. Bake for about 10 minutes or until cooked. Cool cupcakes on wire rack.




you may filled the cupcakes with curd, as well as decorate them beautifully with colourful toppings either icing, cream or just a simple meringue.
